Candied Gingered Pecans

Although this recipe pairs pecans with still another spice, it is clear that the two flavors are very compatible. These gingered nuts fit nicely in a trail mix or candy dish… or add them to a salad.

  • 1/2 cup coarsely chopped pecans
  • 3 tablespoons sugar
  • 1/4 teaspoon ground ginger.

Line a small baking sheet with foil and grease the foil with butter; set aside. In a small skillet, combine all ingredients. Cook over medium-low heat, shaking, not stirring, occasionally. When the sugar melts, reduce heat to low. Continue cooking until sugar is golden brown, stirring enough to keep mixture from burning or sticking to the pan. Pour onto prepared baking sheet; cool. Break into small pieces.

Yield: 1/2 cup
