Hal & Mal’s Sweet Potato Pecan Pie

  • 1 9” unbaked pie shell
  • 1 cup boiled mashed sweet potatoes
  • 1/3 cup light brown sugar
  • 1 T plus 1 tsp light Karo syrup
  • 1 T plus 1 tsp dark Karo syrup
  • Pinch of salt
  • 1/4 tsp ground cinnamon
  • Pinch of ground all spice and nutmeg
  • 1 egg
  • 1 T vanilla
  • 2 tsp half and half

Step 1: Mix all ingredients and pour into unbaked pie shell.

  • 1/4 cup dark Karo syrup
  • 1/4 cup light Karo syrup
  • 1/2 cup light brown sugar
  • 1 egg
  • 1 T vanilla
  • Pinch of ground cinnamon
  • 1 1/4 cup of pecans

Step 2: Mix ingredients except pecans and pour on top of sweet potato mix. Then cover the pie with a layer of pecans. Bake at 350 degrees for 30-45 minutes. Remove from oven and drizzle with 1 1/2 T of Rum.
