Muffin-Tin Ham Biscuits

  • 2 cups of self-rising flour
  • 2 cups of diced country ham or regular baked ham
  • 1 cup of milk
  • 1/2 cup of mayonnaise
  • 1/3 cup of finely chopped pecans

Preheat oven to 425 degrees. In a mixing bowl, combine all ingredients, stirring with a fork just until combined. Drop by spoonfuls into 12 greased muffin cups or 24 miniature muffin cups. Bake for 15 minutes (large) or 8-10 minutes (small) or until golden brown. Leftover muffins freeze well

Yield: 1-2 dozen
